]When it's cold outside, and the wind blows across the marshes just to the east of Stalham, there's no better place to be than sitting down to a meal at the Ingham Swan, a beautiful old pub that's been given a new lease of life by chef-patron Daniel Smith, who has updated the stonewalled and beamed interior perfectly to showcase his high quality Modern British cooking.  You can come in here for a drink, and it's a nice place to do just that, but it's a place to eat first and foremost, and although it doesn't quite scale the heights its 'fine dining' might suggest, the food is great – locally sourced, well presented and delicious, served from a short, changing menu that might include main courses like pan-fried sea bass fillet with horseradish fish cakes, honeyroast local partridge or roast haunch of veinson, with goats cheese fritters or hand-dived scallops with pancetta, and a cauliflower veloute to start.   And if you get so comfortable you just don't want to leave, it's nice to know that  the next door stables have been converted to house five comfy en-suite rooms.
