Roux-trained chef Martin Wishart gained Edinburgh’s first ever Michelin star in 2001, giving fine dining in the city a longed-for contemporary cutting edge. It hasn't looked back. Wishart's modestly sized restaurant by the Water of Leith is fairly formal and reverentially hushed, but the technical skill of the cooking and presentation of the food is outstanding, bringing fine Scottish ingredients such as smoked salmon, scallops and lamb to the table in exciting and unexpected dishes.
