The chef and owner here learnt his trade under the Roux brothers at London's Le Gavroche, and got the gig here at the tender age of 24, so you would expect the food at this Michelin-starred restaurant to be pretty special. And you won’t be disappointed. Since returning north in 2001 Brian Maule has wowed the critics by sourcing only the best of Scottish meat and seafood and treating it with all the love and attention it deserves. Dinners here are divine, and arguably it's not even that pricey considering the quality of the cooking. That said it ain't cheap, but cash-strapped foodies can opt for lunch or one of their excellent value pre-theatre menu.
