Perhaps as close as Glasgow gets to the small-portion complexity, texture and flavour of contemporary Michelin-starred eateries. Great, locally-sourced ingredients, including Dunkeld salmon from Perthshire to start, alongside poached quail’s eggs and caviar and West Coast king scallops. Mains include Highland venison with chervil root puree, beetroot and elderberry or wild sea bass with mushroom risotto and a mushroom veloute. A real treat is the chateaubriand for two, and waiting twenty minutes or so for the Valhrona chocolate fondant is well worth it. A superb wine list too.
