He has spent a lot of time in a lot of kitchens over the years and his latest award-winning eatery has caused a sensation in the sleepy town of Sanquhar in Dumfries and Galloway. Fresh local produce is key, with a daily changing menu that features such delights as seared scallops on crushed cauliflower with poached leeks, lemon and summer truffle vinaigrette, along with beautifully cooked dishes involving Shetland lamb and Atlantic halibut. The wines match the cooking. Faultless.
