So many people get the whole Scottish country house hotel thing wrong. Not so with the Roxburghe Hotel and Golf Course. There are 22 rather stately rooms – treat yourself and book one with a four poster bed, then enjoy a wee dram before dinner and settle in for new head chef Neville Merrin’s stellar cooking. Pigeon shot on the estate, as well as wild garlic and flowers from the grounds, make it on to an innovative menu that always remains impressively local. You won’t get bored here either, with a championship 18-hole golf course, a trout pond (you can catch your own dinner), clay pigeon shooting and real-life hunting all available. And the public rooms have recently been refurbished so you may just want to relax by a roaring fire with and slip into your very own country house fantasy world.
