Geordie chef and gastronomic visionary Paul Kitching left Manchester's only Michelin-starred restaurant, Juniper, to set up in Edinburgh in 2009 and almost immediately it gained a Michelin star in 2010. His creations are vividly imaginative combinations of diverse ingredients and flavours: there is nothing conventional or safe about the dining experience here. And it is an experience. This is dining as pure theatre, a breathtaking treat for diners seriously interested in food and the cultures of food. Situated in a grand Georgian terrace house with sumptuous contemporary decor, you can savour the culinary creation through the window into the open kitchen. There are also plush overnight rooms on the upper floors at 21212. The name? A description of the choices for each course of the weekly-changing menu. A little more flexibility has eased in of late to offer diners more choice beyond the rigid numerical formula, ensuring 21212 remains right at the top of what is today Edinburgh's sparkling culinary tree.
