The Priory is a delightful, idiosyncratic hotel – just the kind of place you would hope to find in Louth, which itself is a bit of an original, a market town with not a chain shop, restaurant or cafe to be found. If you’re staying in Louth, this is the place to pick: an old priory, with a ramble of gardens, comfortable rooms, friendly and personable service, outstanding breakfasts, and a bit of attitude. Paul Hugill, the owner and chef, is one of life’s go-for-it people, running the hotel and restaurant with a staff that includes several with special needs, well trained and given a chance. They add to the fun. And there is a lot of fun if you opt for one of Paul’s ‘surprise dinners’, a seven-course meal (£39.50) spread through the evening (kick off at 7pm) in which he sends out from the kitchen a sequence of delicious small dishes, often including Lincolnshire specialities like haslet or chine (savoury pork), rounded off with an array of desserts and petits fours.
