A place for a night out – great food, in a lovely room, served with style.
The folk at Careys Manor have come up trumps with this new dining addition to our favourite New Forest country hotel and spa, a fine dining restaurant where the food is yummy and the service great but the overall feel still one of relaxed informality. Just our kind of place in fact. Head Chef Alistair Craig's Modern British menu is traditional yet innovative, and in many ways deliberately simple – on paper as it is on the plate, with no wasted words or ingredients, and certainly no purple prose to describe each dish. Ingredients are mostly seasonal, sourced locally where possible, and there are around half a dozen starters, main courses and desserts to choose from – think pressed chicken with a quail egg and New Forest ham followed by loin and haunch of local venison with sweet and sour beetroot. The tasting menu is just as precise and concise – rabbit, scallops, sea bass, venison, pistachio, chocolate and cheese – in that order; they also have specifically veggie a la carte and tasting menus, which is nice. And the environment? Contemporary with a classic twist, with more than a nod to the New Forest location, with rough-hewn wood furniture and forest motifs alongside classy circular booths – all contributing to a feel that is as special as the food. Not at all cheap, but very nice indeed.
Inspired by nature, Cambium at Careys Manor Hotel is a creative and enchanting dining experience. Our name is reflective of our love affair with the New Forest and the desire to showcase the rich natural resources abundant in our local area.
